Recipe:Mini Mediterranean Tarts

This recipe is a huge hit in our household! It’s a great way to get some different veggies and flavours into your little one’s diet. What’s best of all, you can make a bigger tart and share it with all the family too!

Pair this with some homemade potato wedges and some long longstem broccoli for a complete meal.

Ingredients

1 roll of readymade puff pastry

1 tbsp tomato puree

1 tbsp Olive Oil

1 tbsp of balsamic vinegar

pinch of black pepper

Topping ideas:

Courgette

Olives

Red onion

Feta cheese

Cherry tomatos

Mozzarella

Method

  • Preheat over to 180 degrees

  • Lay the sheet of puff pastry onto a baking tray and cut into squares. Score a border onto the inside of the squares

  • To prepare the sauce, in a bowl, mix the tomato puree, oil, vinegar and pepper

  • Then spread onto the inner of each square

  • Put a few of each of the toppings onto each of the squares

  • Brush the puff pastry borders with egg or milk

  • Cook for 15-20 minutes, or until they begin to look golden brown

  • Serve hot or cold and enjoy
